pumpkin chocolate chip cookies

Just go ahead and add these to your holiday menu.

Due to technical malfunction, I don’t have pictures, but you’re going to have to trust me on this one. These cookies are amazing.

I wish it could be fall all year. But then the craze of pumpkin-flavored everything wouldn’t be so special.

These moist, soft gems are worth waiting nine months for anyway…

 

Pumpkin Chocolate Chip Cookies

1 c canned pumpkin (Farmers Market Organic Pumpkin is great)
1/2 c oil
1 egg
1 c brown sugar

Mix mix mix.

Add
2 c flour
2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla

Mix mix mix.

Add
1 tsp baking soda in 1 tsp any-kind-of milk (stir to dissolve soda)

Mix mix mix.

Add chocolate chips.

Mix.

Bake at 350 for 12 minutes (or longer if your cookies are big like mine). Take them out of the oven when you can make a soft indentation with your finger. If they are too firm, they will be dry. But too doughy will be… well, not done. You’ll find the happy place in between.

I need some specifics about how many chocolate chips you put in. Because I have no limits when it comes to chocolate chipage. And I don’t think having all chocolate chips and just a little bit of dough would work. (Although it might not be bad!)

ah, yes… i relate to this dilemma. if you have ‘a bag’ of chips, use between 3/4 (for max pumpkin) and all of the bag (for max chocolate). up to a bag they’ll still bake fine. strangely, i also make a few without chips (gasp!) because I love the pumpkin so much…. xoxo

Haha. You reminded me that I was wanting to write a post about the next thing on my list that I feel strongly about pumpkin + raisins, not pumpkin + chocolate chips. I used to have this discussion with the people at Great Harvest every fall and they never saw my point of view. ;)

My favorite cookie ever is pumpkin raisin cookies. I can eat a whole batch in one sitting. Sometimes I do. These sound good too, but I must stick with the raisins.
